Corn and Cheese Frittata

Quick GF Corn & Cheese Frittata

6 large eggs, beaten
1 cup fresh or frozen corn kernels
½ cup shredded cheddar cheese
2 tbsp butter or olive oil
Salt, pepper & herbs to taste

Directions: Sauté corn in butter, pour in beaten eggs, top with cheese. Cook on medium until set, then broil 2–3 minutes until golden. Garnish with pecans and serve with fresh veggies.
